Trehalose, also known as α, α -trehalose, α -D-pyranoglucoside -α -D-pyranoglucoside, Mycose, is a non-reducing disaccharide formed by the dehydrating condensation of the hemiacetal hydroxyl group on the opposite carbon atom (C1) of two molecules of D-pyranoglucose. It is mainly divided into three types: α, α -trehalose, α, β -trehalose and β, β -trehalose. It exists in molds, algae, dry yeasts, ergos, etc., and can also be artificially synthesized. It has a special function of preserving biological vitality, effectively protecting the structure of cell membranes and proteins. It enables organisms to remain moist inside cells under abnormal conditions, such as high-temperature dehydration (dryness, high osmotic pressure) and freezing, preventing nutrient loss and cell damage caused by water loss. Moreover, in vitro trehalose also has the property of stabilizing biological membranes and protein structures.
