DL-Tartaric Acid CAS 133-37-9

DL-Tartaric acid, also known as 2,3-dihydroxybutanedioic acid, molecular formula: C4H6O6nH2O (crystalline product: n=1, anhydrous product n=0), the appearance of colourless crystals or white crystalline powder, odourless, sour taste.It is a mixture of equal amounts of dextro and levotartaric acid, often containing one or two water of crystallisation, and loses water when heated to 100°C. It is stable in air.It is stable in air, with a density of 1.697, and its solubility in water is 20.6 (20°C), in ether about 1 per cent, and in ethanol 5.01 (25°C). Widely used in food industry, such as as beer foaming agent, food souring agent, flavouring agent, used in refreshing beverages, confectionery, fruit juices, sauces, cold dishes, baking powder, etc., and its acidity is 1.3 times that of citric acid, especially suitable for the souring agent of grape juice.
