Magnesium ascorbate phosphate, with the chemical formula C12H12O18P2Mg3·10H2O, is a white or slightly yellow powder-like chemical substance. It is odorless and tasteless, hygroscopic and soluble in water, and has strong stability in light, heat and air. It is usually prepared by the reaction of phosphorylated vitamin C with magnesium oxide.
This compound can still maintain high activity under high-temperature conditions. After being treated at 200℃ for 15 minutes, the activity retention rate reaches 90%, making it suitable for high-temperature food processing. Its functions include inhibiting tyrosinase activity to reduce melanin, eliminating oxygen free radicals to achieve antioxidation, and synergistically working with vitamin E to enhance the effect. It is mainly used as a feed additive. Toxicological tests showed that the oral LD50 of mice was > 21.5g/kg, and there was no mutagenic effect.
