Epsilon-polylysine is light yellow powder, strong hygroscopicity, slightly bitter taste, is a straight chain polymer of lysine, it is produced by the fermentation of Streptomyces, it has a broad-spectrum bacteriostatic effect. ε-Polylysine is polymerised by 25-30 lysine groups, it is more stable to ph, heat, and its bacteriostatic effect is related to the degree of polymerisation and the environment, and the molecular weight of the molecular weight is the best in the range of 3600-4300 bacteriostatic activity.
