Propyl gallate (PG), also known as propyl gallate, is a synthetic oil-soluble antioxidant. Oil-soluble antioxidants are all phenolic compounds, including butylhydroxyanisole (BHA), dibutylhydroxytoluene (BHT), tert-butylhydroquinone (TBHQ) and so on, which are able to provide hydrogen atoms to combine with free radicals generated from the auto-oxidation of fats and oils, to form a relatively stable structure, and to block the chain auto-oxidation of fats and oils to achieve the purpose of antioxidation.
