What is Potassium pyrophosphate (CAS 7320-34-5)?

Potassium pyrophosphate (tetrapotassium pyrophosphate, TKPP) is a potassium salt of pyrophosphate. It is a member of the condensed phosphate (polyphosphate) family and is generally represented by the chemical formula:

K4P2O7 (CAS No. : 7320-34-5, molecular weight approx. 330.34)

It is white powder or lumpy solid at normal temperature, slightly hygroscopic, relative density 2.534, melting point about 1109℃. Potassium pyrophosphate is freely soluble in water (about 187 grams dissolves in 100 grams of water at 25°C), insoluble in ethanol, and its aqueous solution is alkaline (a 1% aqueous solution has a pH of about 10.2).

Potassium pyrophosphate are one of the four potassium ions ( K + ) and one of the pyrophosphate ions ( P 2 O 7 4- ) . About the molecular framework. The pyrophosphate ion is produced by the dehydration and condensation of two phosphate ions. Pyrophosphate can chelate calcium, magnesium and heavy metal ions and forms stable complexes with calcium and magnesium ions in hard water. It also has good dispersibility, buffering and emulsifying properties. In food, it can bind metal ions, control pH, and encourage binding of protein and water. This "chelation + water retention + buffering" is the core basis of its broad application in food industry.

From the chemical point of view, potassium pyrophosphate possesses the usual properties of condensed phosphates. Its aqueous solution is alkaline, it forms chelates with alkaline earth metal ions and heavy metal ions and it is easily decomposed by heat (it hydrolyzes to phosphates with long boiling). Potassium pyrophosphate food grade shall conform to the quality standards for food additives and shall be stored in a dry sealed container.

Food grade potassium pyrophosphate is products intended for food processing, used as food additives (moisture retention, chelation, emulsification, texture modification). Compared with industrial-grade products, food-grade products pay more attention to the following indicators:

Main content

Water retention and chelation effects are directly related to purity.

Heavy metal limits (lead, arsenic, fluorine, etc.)

Food additives must meet quality standards for food additives, which are important safety indicators, and have strict limits for harmful impurities such as lead, arsenic and fluorine.

Water insoluble material

Water-insoluble matter affects the sensory quality and processing performance of food and should be kept low.

Alkalinity and pH

The aqueous solution is alkaline and the pH stability is responsible for the buffering and water retention characteristics of the food system which must be in compliance with the specifications.

Moisture

Potassium pyrophosphate is slightly hygroscopic and excessive moisture content will affect measurement and storage stability. Therefore, it must be controlled and sealed in packaging.

What are the uses of Potassium pyrophosphate?

1. Water retention and tenderization of meat products (primary application)

Potassium pyrophosphate is a powerful moisture retainer and meat tenderizer. It can chelate metal ions, promote the water absorption and swelling of muscle protein when used together with sodium pyrophosphate, sodium tripolyphosphate etc, and significantly improve the water retention and tenderness of meat products such as ham, sausage, meatballs, improve the taste and reduce cooking losses.

2. Aquatic products retain water and increase weight

In seafood processing, potassium pyrophosphate helps shrimp, fish balls, crab sticks and other products retain moisture, reduces juice loss during thawing and cooking, improves product color and elasticity and increases yield.

3. Emulsification and Stabilization of Dairy Products

For example, potassium pyrophosphate is used as an emulsifying salt and stabilizer in dairy products. It helps dairy products such as cheese to emulsify evenly during heating, to prevent fat separation and improve meltability and texture.

4. Beverages stability and buffering

Potassium pyrophosphate is used in beverages as a stabilizer and pH buffer. It chelates metal ions in beverages to prevent turbidity and precipitation and to help maintain clarity and flavor stability of beverages.

5. Flour product quality upgrading

Potassium pyrophosphate is used in noodle and dumpling wrappers and other flour products It can chelate metal ions, regulate the structure of the gluten network and enhance the extensibility of dough and the chewy texture of finished products.

6. Sweets and Leavening Systems

Potassium pyrophosphate can be used as an acidic salt part in compound leavening agents. It can be combined with carbonates in baked goods like pastries and biscuits to help control the rate of gas production and improve the leavening effect.

7. Water treatment and boilers (indirect contact)

It is used as a water softener, scale inhibitor and buffer in water treatment, and is used for boiler descaling. It may play an indirect role in the water treatment of our water heaters and HVAC systems.

8. Electroplated hardware and electronic products

The main complexing agent in cyanide-free pyrophosphate electroplating (copper, zinc, and tin plating) is potassium pyrophosphate. It is widely applied in the surface treatment of hardware and electronic components. Potassium pyrophosphate is linked to the production chain of plating for faucets, locks, electronic connectors etc.

9. Cleansers

Potassium pyrophosphate is used as a build-up agent and water softener in premium detergents and laundry powders. It helps to remove calcium and magnesium ions from hard water and enhances cleaning power. The powders and liquids we use for laundry may contain potassium pyrophosphate as part of their formulations.

10. Other food applications

The application scope of food-grade potassium pyrophosphate is still expanding, including quality improvement of canned foods, stabilization of condiments, and color and crispness preservation of fruit and vegetable products .

Summarize

Potassium pyrophosphate (Tetrapotassium Pyrophosphate, TKPP) is a white, powdery condensed phosphate that dissolves readily in water to give an alkaline aqueous solution. It has several functions such as chelation, water holding, emulsification and buffering. In everyday life it is encountered indirectly through the supply chains of electroplated hardware and electronic products, detergents, food, ceramic tiles, coatings and water treatment. Food grade potassium pyrophosphate is widely used in the food industry as a water-retaining and tenderizing agent in meat and seafood products, an emulsifying stabilizer in dairy products, a stabilizing buffer in beverages, a quality improver in noodle products and a component in pastry leavening systems. It is an important food additive for food taste, texture and stability.
