P-Mentha-8-thiol-3-one is a colourless to light yellow liquid with characteristic mint-like sulphide odour. Mainly used as thiol modifiers in the spice industry (e.g. meat flavouring, coffee flavouring) and as intermediates in organic synthesis, its sulphur-containing structure enhances the persistence of the aroma. It should be stored in a sealed container away from light and avoid contact with oxidising agents.
