Ammonium alginate is a chemical substance with the molecular formula C6H7O6NH4. alginic acid, also known as fucoidan or alginate, is an anionic polysaccharide widely distributed in the cell walls of brown algae, which by binding with water forms a viscous gel.It is also a prominent component of biofilms produced by the bacterium Pseudomonas aeruginosa, the main pathogen in cystic fibrosis, which confers its high resistance to antibiotics and is killed by macrophages.Its colour ranges from white to yellowish brown.It is sold in filamentous, granular or powder form.It is used as a micellar sugar basic, thickener, stabiliser and emulsifier.
