 What is Ferrous Lactate?

project

information

Chinese name

Ferrous lactate

English name

Ferrous lactate / Iron(II) lactate

Molecular formula

C₆H₁₀FeO₆ (Fe(C₃H₅O₃)₂)

molecular weight

233.99 (anhydrous)

CAS number

5905-52-2

Appearance

Greenish-white crystalline powder with a slightly peculiar odor and a slightly sweet taste.

Solubility

It dissolves in water (approximately 2.5% in cold water and approximately 8.3% in boiling water), and its aqueous solution is weakly acidic and appears as a greenish, transparent liquid.

Iron content

Approximately 19% to 24% (calculated as Fe, depending on hydration level)

Where did it come from?

Ferrous lactate is produced by reacting lactic acid with an iron source. Lactic acid itself is a natural organic acid—it is found in yogurt, sauerkraut, and human muscle (produced after exercise). Ferrous ions (Fe²⁺) are the only form of iron that can be efficiently absorbed by the human intestine.

Combining iron and lactic acid into a salt is like "packaging" iron into a mild, bioavailable form, allowing it to remain quietly in the food system and be precisely released in the gut .

Complete Uses of Food-Grade Ferrous Lactate

1. Iron fortification – primary function

Ferrous lactate is one of the core choices for iron fortification in food worldwide, especially in categories sensitive to color, taste, and oxidative stability:

Food categories

Why use ferrous lactate instead of ferrous sulfate?

Infant formula milk powder

It does not alter the milk powder's milky white color, has no metallic taste, is highly absorbable, and has low chlorate content.

Infant rice cereal/complementary food

Rice cereal should be off-white so babies won't refuse it.

Fortified flour and bread

White bread is not dull, and the dough ferments stably.

Fortified noodles/pasta

The noodles retain their natural color

Fruit juice and fortified beverages

It is stable under acidic conditions, does not oxidize vitamin C, and does not change color.

Children's biscuits and snacks

It does not oxidize or deteriorate during long-term storage and has no odor.

Meal replacement powder and protein powder

Stable in dry powder, with a clean taste after mixing

Vegetarian and algae foods

Plant-based diets provide natural iron supplements

2. Color protection and color-changing agents – Exclusive authorization for olive blackening

E585 is specifically approved in the European Union for the blackening of olives. This is one of the most unique applications of color control in food additives—it doesn't involve adding external pigments, but rather catalyzing a color reaction in the food's own components.

● Mechanism: Fe²⁺ + polyphenols → oxidative complexation → black

● Process: After the green olives are oxidized in an alkaline solution, ferrous lactate accelerates and stabilizes the formation of the black complex.

● Limit: ≤ 150 mg Fe/kg in food

In other foods, ferrous lactate can play a role in color stabilization . In some food systems that are prone to discoloration due to trace metal catalysis, ferrous lactate exists in an organic chelate state. Unlike free Fe²⁺, which has strong oxidative catalytic activity, it can "lock in" iron ions and reduce their side effects on food color.

3. Acidity regulators

Ferrous lactate aqueous solution is weakly acidic, and lactate itself has good buffering capacity. In some food formulations that require fine-tuning of acidity, it can simultaneously provide the dual functions of iron fortification and acidity regulation—"killing two birds with one stone."

4. Blending strategy with other iron sources

In actual food formulations, ferrous lactate rarely works alone. It is often used in combination with other iron sources:

Ferrous lactate + ferrous sulfate: Ferrous sulfate provides a high initial iron concentration, while ferrous lactate provides a smooth taste and color stability;

Ferrous lactate + ferric pyrophosphate: Ferric pyrophosphate is white and insoluble in water (it does not catalyze oxidation), while ferrous lactate supplements the absorption advantage of soluble iron.

Ferrous lactate + Vitamin C: Vitamin C reduces any oxidized Fe³⁺ back to Fe²⁺, synergistically protecting iron absorption and utilization. This is a classic combination in infant formula.

Summarize

Ferrous Lactate (E585) has a unique label in the world of food additives—it is the only food iron source that can both supplement iron and change color.

In baby rice cereal, it is quiet—it doesn't change the off-white color, doesn't bring a metallic taste, and fulfills its mission of "the first taste of iron in life";

In green olives, it's dramatic—Fe²⁺ reacts with the olive's own polyphenols, turning the green olives deep black from the inside out, without a single drop of artificial coloring.

In fortified bread, it is invisible—white bread remains white, and no one can tell that it contains 20% of the daily iron requirement.

It's not the one with the highest iron content, nor is it the cheapest, but it's the only one that can still effectively supplement iron even under the most demanding requirements for color and taste.

When you see "ferrous lactate" listed as an ingredient on the ingredient list of a bottle of baby rice cereal—please remember, it's not just any random type of iron. It's the gentlest option left for babies after undergoing rigorous screening based on color, taste, absorption rate, and safety.
