3-Phenylpropionic acid, also known as hydrogenated cinnamic acid, naturally exists in raspberries and rock roses. It precipitates as colorless needle shaped crystals from ethanol and water, and as colorless prismatic crystals from ether. There are elegant coumarin, vanilla bean like aromas, as well as hyacinth and rose like fragrances. Easy to dissolve in hot water, alcohol, benzene, chloroform, ether, glacial acetic acid, petroleum ether, and carbon dichloride. Slightly soluble in cold water. Can evaporate with water vapor. 3-Phenylpropionic acid is used as a fragrance fixative for spices.
